Mini Grilled Cheese Sandwiches

Hey there, friends! I’m back today with another simple and totally delicious recipe. I’m always looking for easy yet flavorful party snacks, and these mini grilled cheese sandwiches are a winner.

As I’ve mentioned before, My mom and I are getting ready to set sail on a cruise. I’m ridiculously excited. Of course, I’ve been perusing the Carnival site in order to learn about all of the activities and dining options. We are sailing on the Carnival Breeze, and I noticed it has a restaurant called The Taste Bar. It’s basically a restaurant of snacks. Snacks, people! I live for snacks. Anyway, when I was looking through the photos and saw these little grilled cheese sandwiches, I was inspired to create my own.

I used two different cheeses in my sandwiches. Since there are only two main ingredients, bread and cheese, you want to use the good stuff. For these, I’m using Cracker Barrel Sharp Cheddar and Kerrygold Dubliner. When I made my Pumpkin Mac and Cheese, I discovered that these two work well together so I knew the combination would also be perfect for sandwiches.

For the soup, you can certainly make your own. However, I just picked up a really thick and hearty premade tomato basil bisque.

Let me walk you through the recipe; then we will talk about presentation.

Mini Grilled Cheese Sandwiches

Here’s what you will need:

  • 2 tablespoons butter, softened
  • 12 slices white bread
  • 8 ounces sharp cheddar cheese, sliced
  • 7 ounces Dubliner cheese, sliced
  • 2 cups tomato basil soup

Begin by preheating a large skillet on medium heat. Then, generously butter one side of a slice of bread.

Place the bread butter side down onto the skillet; then top with a slice of each cheese. Butter a second slice of bread on one side and place it butter-side-up on top of the sandwich.

Grill until lightly brown and then flip over. Continue grilling until both sides are golden and the cheese is melted. Do the same with the remaining bread and cheese.

Allow the sandwiches to cool slightly. Trim off the crust and cut the sandwiches into 4-5 thin strips.

Heat the tomato basil soup in the microwave or on the stove and serve on the side.

And that’s it. I really love these as an appetizer because they are classic comfort food. Plus, they are not overly fancy, and you can still make them look really special and elegant. Here are a couple ideas:

One possibility is to set all of your mini sandwiches on one plate and serve with a bowl of tomato soup for dipping.

So simple, but still really beautiful and fun.

If you have a bit more time, and maybe a smaller group, you can set up individual servings. Use shot glasses for serving the soup and pair with two mini grilled cheese sandwiches.
